• add "init=/bin/bash" or "init=/bin/sh" at the end of kernel line (line starting with linux)
• F10 proceed to boot
• mount -n -o remount,rw /

Second, using a rooted file manager, delete the original apk from /system/app (android keeps the system app apart from the updates, the latter being at /data/apps).
